Of all the many components of my job as executive chef, teaching this class ranks as one of my most favorite. During this very small, two hour, hands on class, I will take you through the entire process of mixing, fermenting, shaping and baking bread using wild sourdough yeast. Afterward, we sit at the bar, and enjoy the fruit of our labor by eating some of the bread we baked, lathered in butter, with a glass of wine. The reason I enjoy this class so much because it is here you taste the essence of bread&cup, and our concept of simple food and drink.
Participants will take home bread they bake, plus sourdough starter to keep, and a recipe to replicate at home
