Supper Club begins today, and many are still uncertain what it is.  Let me explain.

Each week, my team and I will introduce you to a food or flavor about which you might be skeptical. The goal is to expand your understanding and appreciation of something you might otherwise overlook or ignore.  We also hope you’ll discover ideas and techniques that you can use in your cooking.

Why bother?

Why should I try to like a certain food that I know I don’t like?  Where is the sense in trying to learn to like it?  Good question.

What if you only thought you didn’t like that food?  What if one bad experience as a child forged an aversion that it’s now time to revisit?  What if it was just the texture of the food and not the flavor?  If it was prepared differently, what are the chances I could change your mind?

Here are three ways to treat food you don’t like:

  1. Ignore it.
    • This is the easy way out, but where’s the fun in this?
  2. Mask it.
    • Zucchini is notoriously treated this way. Someone bakes you a loaf of zucchini bread and boasts that you can’t even taste the zucchini! In this way, the vegetable only acts as a filler, not as a standalone component to be enjoyed.  Granted, it might be a good way to use up that extra zucchini that you end up with, but we’re interested in working with the characteristics that make it delicious.
  3. Complement it.
    • Here’s is where we will focus our attention at Supper Club. Great cooking comes from a balance of flavors, textures and sensations.
